Pan fried Blue cod with lemon and capers


I have been meaning to have some fish for dinner for a while now. When I cook fish I like to keep things simple. Fish is subtle and delicate. I added lemon and capers to mine to bring out and enhance the flavours of the blue cod.
This recipe is super easy but will impress all your guests!

Serves 4

What you will need4 fillets white fish (I used blue cod)
25g organic butter
20g capers
1 lemon sliced
1/2 cup flour



What to do

Lightly coat the fish fillets in the flour and dust off any excess.
Heat butter in a pan on a med-high heat.

Gently place fillets in pan once it is heated.
Cook the fish until golden on the first side. Add the lemon slices and capers into the pan with the fish
 You don't want to over cook the fish, I wouldn't recommend cooking on the first side for longer than 2 minutes.

 Carefully turn the fish over and continue cooking. This side should only take a minute. You want the fish to be slightly under cooked once you take it off the heat, as it will continue cooking for a short time.
This will keep the fillet perfectly moist and will melt in your mouth

Rest fillets on a paper towl to drain excess butter.

Serve immediately.

 Serve on a cold winters day with hot roasted vegetables
or on a hot summers day with fresh garden salad
